Ingredients

  • 180 g Penne
  • Salz
  • 200 g Cherry tomatoes
  • 8 leaves Romaine lettuce
  • 100 g zucchini
  • 2 EL lemon juice
  • 1 EL Dijon mustard (grainy)
  • 5 Anchovy fillets (in oil)
  • Pfeffer (ground)
  • 2 EL olive oil
  • 60 g Feta cheese
  • basil for garnish

Instructions

    Cook pasta in plenty of boiling salted water until al dente, drain, rinse with cold water and let cool. Wash and halve or quarter cherry tomatoes as desired. Clean, wash, dry and cut romaine into bite‑sized pieces. Wash zucchini, peel if needed and slice lengthwise into very thin strips. Pat anchovy fillets dry and chop finely.

    Whisk lemon juice with mustard. Add anchovies, season with salt and pepper, then whisk in olive oil. Combine salad ingredients, sprinkle with crumbled feta, season again with salt and pepper. Pour the dressing over the salad and serve garnished with basil.
