Ingredients

  • 1.5 red bell peppers
  • 1.5 yellow bell peppers
  • 2 red onions
  • 200 g mozzarella
  • 2 tbsp wine vinegar
  • 4 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 70 g black olives (pitted)
  • Basil

Instructions

    Halve the bell peppers, remove stems and seeds, wash, and cut into fine strips. Peel the onions and slice thin rings or shave them. Blanch both briefly in boiling salted water, then shock in ice water and drain well. Mix all ingredients.

    Slice the mozzarella and fold it in. Whisk vinegar, oil, salt, and pepper to make a dressing and drizzle over the salad. Arrange olives and basil strips and leaves on bowls and sprinkle with extra pepper.
