Ingredients

  • 1 kg mixed bell peppers
  • 1 vegetable onion
  • 200 g mozzarella
  • 6 tbsp white wine vinegar
  • 8 tbsp olive oil
  • 1 sprig sage
  • 0.5 bunch Basil
  • salt (pepper)

Instructions

    Quarter the peppers, wash, remove seeds, pat dry. Place skin side up on a foil-lined baking sheet and roast at 250°C for 15 minutes; let cool, then peel off skins. Peel onion and shave into thin rings. Slice mozzarella into rounds.

    Arrange peppers, sliced onions, and mozzarella alternately on a plate. Whisk vinegar, salt, pepper, and 6 tbsp olive oil; pour over the salad. Heat remaining olive oil in a pan, crisp sage leaves, and sprinkle over the salad with basil leaves.
