Pasta salad with red cabbage and smoked mackerel

Ingredients
- 500 g red cabbage
- 4 tbsp red wine vinegar
- 2 tsp sugar
- 4 tbsp rapeseed oil
- Salt
- Pepper (freshly ground)
- 500 g pasta (spaghettoni)
- 2 tbsp olive oil
- 4 sprigs thyme
- 200 g smoked mackerel fillet
- fresh thyme (for garnish)

Clean the red cabbage and cut into thin strips. Toss with red wine vinegar, sugar, and rapeseed oil; season with salt and pepper and cover to marinate for about 5 hours, turning occasionally.

Break the spaghettoni into small pieces and cook according to package instructions in plenty of boiling salted water. Drain in a colander, rinse under cold water, let drain well, then mix with olive oil.

Wash the thyme, shake dry, pluck leaves from stems. Mix thyme with pasta; season with salt and pepper.

Just before serving, combine the pasta with the drained red cabbage and arrange in deep bowls. Tear the smoked mackerel fillet into pieces and scatter over the salad. Garnish with fresh thyme.
