Ingredients

  • 2 smoked mackerel fillets
  • 200 g Green beans
  • 2 large tomatoes
  • 150 g small white beans (canned)
  • 80 g Black olives
  • 4 soft-boiled eggs (4 min boiled)
  • 8 slices baguette
  • 2 tbsp white wine vinegar
  • 6 tbsp Olive oil
  • 1 tsp Mustard
  • Salt
  • Pepper
  • 1 tbsp finely chopped basil
  • basil for garnish

Instructions

    Wash, trim and cook beans in boiling salted water for about 10 minutes, drain, rinse with cold water and set aside. Wash tomatoes, remove stems and slice. Drain beans in a sieve and rinse under cold water.

    Toast baguette slices and arrange on four plates. Break mackerel fillets into bite-sized pieces, then arrange all prepared ingredients on the bread slices. Whisk together vinaigrette ingredients and drizzle over the salad.

    Peel eggs, halve them and place on the salad, sprinkle with olives and garnish with basil before serving.
