Colorful lentil salad with smoked mackerel is a perfect after-work recipe – quick to make, healthy and with fresh ingredients.

Ingredients
- 300 g brown lentils
- 400 ml Vegetable broth
- 1 stalk leek
- 2 carrots
- 0.5 bunch dill (ca. 15 g)
- 2 tbsp dark balsamic vinegar
- 3 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 400 g smoked mackerel fillet
Instructions

Soak the lentils overnight in cold water. Drain and add to boiling vegetable broth. Cover and simmer gently for about 30 minutes, stirring occasionally until tender.

Halve the leek, rinse, shake dry, trim, and slice into rings. Peel the carrots and dice small. Wash the dill, shake dry, and pluck the tips.

Mix the cooked lentils with the remaining vegetables, season with vinegar, oil, salt, and pepper to taste. Tear the smoked mackerel into pieces. Arrange the lentil salad on plates, top with mackerel pieces, and garnish with dill tips before serving.
