Zoodles with Mango Sauce
The tasty Zoodles with Mango Sauce from Spoonsparrow are low in calories and absolutely delicious.
Ingredients
- 150 g mango (0.5 mangoes)
- 1 small green chili pepper
- 1 tsp Mustard
- 1 tsp liquid honey
- 4 tbsp white balsamic vinegar
- 50 ml olive oil
- Salt
- 4 zucchini
- 350 g cherry tomatoes
- 1 Red Onion
- 40 g pine nuts
- 4 sprigs Mint

For the mango sauce, peel the mango, remove the flesh from the pit and cut into large pieces. Wash, trim and roughly chop the chili pepper. Blend the mango, chili, mustard, honey and vinegar in a blender until smooth. Add olive oil and blend again to create a creamy sauce. Season with salt.

Wash, trim and spiralize the zucchini into fine strands using a spiralizer. Toss the Zoodles with the mango sauce and let them sit for about 10 minutes.

Meanwhile wash and quarter the tomatoes. Peel the onion, halve it and slice into rings. Toast the pine nuts in a dry pan until fragrant. Wash the mint, shake off excess water and pluck the leaves.

Arrange the Zoodles on four deep plates and distribute the tomatoes, onions, pine nuts and mint over them.
