Ingredients

  • 300 g rigatoni
  • Salz
  • 200 g Green beans
  • 2 carrots
  • 200 g Cherry tomatoes
  • 3 spring onions
  • 1 Garlic clove
  • 150 g canned fava beans
  • 150 g canned kidney beans
  • 100 g canned chickpeas
  • 2 tbsp lemon juice
  • 2 tbsp white balsamic vinegar
  • 4 tbsp olive oil
  • pepper (ground)

Instructions

    Cook the pasta in salted water until al dente, drain, rinse with cold water and let it dry.

    Wash the green beans, trim ends and cut into ~5 cm pieces. Peel carrots and cut into ~5 cm strips. Blanch both in boiling salted water for about 6 minutes. Drain and shock in ice water. Cut tomatoes in halves. Wash spring onions, trim and slice into rings. Peel garlic and finely chop. Rinse all beans in a sieve, drain well.
