Ingredients

  • 170 g arugula
  • 100 g Bündner meat
  • 2 shallots
  • 4 tbsp Walnut oil
  • 4 tbsp plant oil
  • 3 tbsp white wine vinegar
  • Salt
  • Pepper
  • 50 g Parmesan
  • 3 tbsp chopped walnuts

Instructions

    Wash and dry the arugula, then shake off excess water. Peel and finely chop the shallots. Whisk together the oils, vinegar, salt, pepper, and shallots to make a dressing.

    Grate the parmesan finely. Toss the salad in the dressing and arrange on plates. Layer thin slices of Bündner meat between the greens and garnish with parmesan shavings and walnuts.
