Ingredients

  • 600 g green beans
  • 60 g coconut meat (or coconut flakes)
  • 1 small onion
  • 1 Garlic clove
  • 2 red chilies
  • 2 tbsp Coconut oil
  • 0.5 tsp mustard seeds
  • 6 curry leaves
  • Salt
  • 3 tbsp Lemon juice

Instructions

    Wash and trim the beans, cut into 1 cm pieces. Grate the coconut meat finely, peel and finely chop the onion and garlic. Wash the chilies and slice them lengthwise.

    Heat the coconut oil in a pan. Add mustard seeds and stir until they start to pop. Add onion, garlic, chili, and curry leaves; cook for 2 minutes while stirring, then remove from heat and let cool.

    Boil the beans in salted water for about 10 minutes, then drain, shock with cold water, and let them drain.

    Mix the beans with the spice mixture and lemon juice, let sit a bit longer. Finally season to taste, sprinkle with coconut shreds, and serve.
