Ingredients

  • 250 g Penne
  • salt, pepper freshly ground
  • 100 g Sugar snap peas
  • 2 green bell peppers
  • 5 tomatoes
  • cucumber
  • 5 radishes
  • 3 tbsp white wine vinegar
  • 1 tsp Dijon mustard
  • 1 pinch sugar
  • 6 tbsp Olive oil
  • 1 bunch chives

Instructions

    Cook the penne in plenty of salted water according to package instructions until al dente. Drain, rinse with cold water and let drain.

    Rinse the sugar snap peas, trim them and blanch in salted water. Drain, rinse with cold water and let drain. Quarter the green bell peppers, clean, rinse and cut into thin strips. Rinse the tomatoes and quarter them. Slice the cucumber (peel if desired). Rinse the radishes, clean and slice into sticks.

    Whisk together vinegar, mustard, salt, pepper, sugar and olive oil in a large bowl. Add the penne and prepared vegetables and mix well. Trim the chives, shake dry and cut into fine ribbons. Fold them into the salad.
