Penne with Green Asparagus
Penne with green asparagus is a perfect after-work recipe – quick to make, healthy and made with fresh ingredients.
Ingredients
- 1 kg green asparagus
- salt, freshly ground pepper
- 1 red bell pepper
- 40 g walnut kernels
- 500 g penne
- 4 tbsp olive oil
- 2 tbsp breadcrumbs
- 1-2 garlic cloves
- Basil
Instructions

Peel the lower third of the asparagus spears and trim the ends generously. Rinse the asparagus, cut into pieces, and cook in salted water for about 6 minutes.

Quarter the bell pepper, clean it, rinse, and cut into pieces. Chop the walnuts. Cook the penne in plenty of salted water according to package instructions until al dente.

Heat 1 tbsp olive oil in a non-stick pan. Sauté the pepper for about 2-3 minutes, then remove from the pan. Add the remaining olive oil, brown the walnuts and breadcrumbs briefly. Peel the garlic cloves and squeeze them into the pan.

Drain the penne and let it dry. Drain the asparagus as well. Mix the asparagus and pepper with the penne. Season with salt and pepper. Sprinkle the breadcrumb mixture on top. Garnish with basil and serve.
