Ingredients

  • 500 g mixed mushrooms (e.g., porcini, chanterelles, chestnuts)
  • 1 bunch spring onions
  • 1 clove garlic
  • 4 tbsp olive oil
  • 1 bunch flat-leaf parsley
  • Salt
  • freshly ground pepper
  • 500 g penne (rigate)

Instructions

    Clean and finely chop the mushrooms. Wash and slice the spring onions into rings. Peel and mince the garlic.

    Heat the olive oil. Sauté the mushrooms and garlic for 6-8 minutes. Add the spring onions in the last minute.

    Rinse, dry, and chop the parsley. Mix it into the mushrooms and season with salt and pepper.

    Cook the penne in plenty of salted water according to package instructions until al dente. Drain and let rest. Toss with the mushroom mixture.
