Pasta Salad

Ingredients

  • 400 g penne
  • Salad salt
  • 100 g Sugar snap peas
  • 200 g Cherry tomatoes
  • 1 bunch spring onions
  • 1 bunch arugula
  • 250 g yogurt
  • 125 ml whipping cream
  • freshly ground pepper
  • a few spritzes lemon juice
  • 1 pinch sugar
  • 4 tbsp finely chopped mixed herbs
  • 125 g canned corn kernels

Instructions

    Cook Penne in plenty of salted water according to package instructions until al dente. Rinse, trim and cut sugar snap peas as desired; blanch in salted water for 2 minutes. Drain pasta, rinse under cold water, then drain. Drain snap peas, rinse under cold water, then drain.

    Rinse tomatoes and halve or quarter them depending on size. Trim, wash and finely slice spring onions. Rinse arugula and trim.

    In a large bowl whisk together yogurt and cream. Season with salt, pepper, lemon juice and sugar. Stir in herbs. Add the prepared vegetables and corn, then mix everything thoroughly.
