Hearty Potato Goulash

A deft potato goulash from Spoonsparrow is always wonderfully good.

Ingredients

  • 800 g new potatoes
  • 1 tbsp oil
  • 1 Garlic clove
  • 2 tbsp Tomato paste
  • 0.5 l vegetable broth
  • 1 sprig rosemary
  • 1 tbsp yellow curry powder
  • 1 tsp cumin
  • 1 onion
  • 250 g green beans
  • 1 tbsp whipping cream
  • 1 tsp flour
  • Salt
  • Pepper
  • 2 boiled sausages (sliced)

Instructions

    Peel, wash and cut potatoes into small bite‑size pieces. Peel and finely chop the onion. Heat oil in a pot, sauté onions, add peeled garlic cloves and cook briefly, then stir in tomato paste. Add potatoes and pour in broth. Stir in rosemary leaves, curry powder and cumin, cover and simmer for 15 minutes.

    Wash, trim and finely cut green beans; add to the pot with potatoes and continue cooking for about 10 minutes. Whisk cream and flour together, then mix into the potatoes. Simmer briefly more. Season with salt and pepper. Finally add sliced sausages and heat through.
