Ingredients
- 1 kg celery stalks
- Salt
- 2 Eggs
- pepper (ground)
- 80 g breadcrumbs
- 2 tbsp freshly grated Parmesan
- oil (for frying)
- 100 g cream cheese
- 2 tbsp mayonnaise
- 1 untreated lime
- Cayenne pepper
Instructions

Wash, trim, and cut the celery into about 5 cm long sticks. Blanch briefly in salted water, shock in ice water, then pat dry.

Whisk the cream cheese with mayonnaise until smooth. Squeeze in lime juice and grate some zest; fold both into the dip and season with salt and cayenne pepper.

Beat the eggs with a pinch of salt and pepper and coat the sticks. Dredge them in the Parmesan‑breadcrumb mixture and fry in hot oil (170 °C) 2–3 minutes until golden brown. Drain on paper towels and serve with the dip.
