Ingredients
- 500 g crab meat
- 2 EL breadcrumbs
- 1 egg
- 2 EL mayonnaise
- 1 EL sharp mustard
- 2 EL freshly chopped parsley
- 2 EL Worcestershire sauce
- 2 Spring Onions
- Salt
- Pepper (freshly ground)
- vegetable oil (for frying)
- paprika powder (to dust)

Break up the crab meat and remove any shell remnants. Mix in the breadcrumbs. Whisk together the egg, mayonnaise, mustard, parsley, and Worcestershire sauce until smooth. Wash, trim, finely chop the spring onions and add them to the mixture. Fold everything into the crab meat so a well-formed mass results. Season with salt and pepper. Scoop tablespoon-sized balls and fry in hot oil (about 170°C) for 4–5 minutes until golden brown. Drain on paper towels, dust with paprika powder, and serve on cocktail sticks.
