Paprikagelee

- 1 kg red bell peppers
- 2 tart apples
- 200 ml clear apple juice
- 1 red chili pepper
- 500 g gelatin sugar (2:1)
- 1 Lime (juice)

Wash the bell peppers, halve them, deseed and cut into pieces. Wash the apples, quarter them, remove the core and cut the quarters into pieces as well. Combine with the peppers in a pot with about 200 ml water, bring to a boil while stirring occasionally. Simmer gently for about 15 minutes and then puree finely with an immersion blender. Pour through a cloth-lined sieve to collect the juice. Squeeze out the pulp and top up with apple juice to 1 l. Transfer to a pot and bring to a boil.

Wash the chili pepper, halve it, deseed and cut into fine strips. Add the gelatin sugar and lime juice to the paprika juice and simmer for about 4 minutes while bubbling (perform a gel test).

Fill prepared jars and let cool completely before sealing tightly.
