Panforte

Ingredients
- 100 g peeled almond kernels
- Haselnuts (100 g each)
- Walnut kernels (100 g each)
- 150 g dried figs
- 150 g mixed candied fruits
- 150 g powdered sugar
- 100 g honey
- Back sheets (for lining the pan)
- Zinc powder (1/4 tsp)
- Clove powder (1/4 tsp)
- Coriander powder (1/4 tsp)
- Ginger powder (1/4 tsp)
- 0.25 tsp nutmeg
- 2 tbsp flour
- butter (for greasing)
- powdered sugar (for dusting)
- cinnamon (for dusting)
Instructions

Roast almonds and nuts in a pan briefly while stirring. Let cool and roughly chop.

Cut figs and candied fruits into small cubes, place them in a bowl, and mix with the spices and nuts.

Place powdered sugar and honey in a metal bowl over a water bath. Stir constantly over low heat until the mixture melts and draws threads; then let it cool slightly while stirring.

Stir the honey solution into the prepared nut-fruit mixture and fold in 1–2 tbsp flour. Grease a flat pan (square or round, depending on sheets) with butter, line with sheets, pour in the dough, and smooth the surface.

Bake in a preheated oven at 150°C for about 30 minutes. Let cool. Garnish by lightly dusting powdered sugar and cinnamon.
