Panna Cotta with Plums

Creamy panna cotta made with fresh plums and a citrusy twist from Spoonsparrow.

Ingredients

  • 5 sheets white gelatin
  • 1 stalk lemongrass
  • 400 ml whipping cream
  • 200 ml milk
  • 60 g sugar
  • 250 g fresh plums
  • 100 ml red grape juice

Instructions

    Soak the gelatin in cold water. Cut the lemongrass into pieces. In a saucepan, combine the cream, milk, lemongrass, and 50 g of sugar; bring to a boil once. Remove from heat, squeeze out excess water from the gelatin and stir it into the warm cream mixture. Let cool for about 10 minutes. Remove the lemongrass and pour the custard into four small cups. Cover and refrigerate for at least 3 hours.

    Wash, pit, and chop the plums into small pieces. In a separate pan, caramelize the remaining sugar. Deglaze with grape juice, stirring until the caramel lifts from the pan bottom. Add the chopped plums to the sauce and let it cool.
