Paprika with vegetable filling

Ingredients
- 4 red bell peppers
- fett (for greasing)
- 250 g yellow cherry tomatoes
- 80 g black, pitted olives
- 3 stems basil
- 3 stems Oregano
- 3 stems Parsley
- 2 stems Mint
- olive oil
- 5 tbsp freshly grated Parmesan
- 1 ball mozzarella (125 g)
- Salt
- pepper (from grinder)
- balsamic vinegar (for drizzling)
Instructions

Preheat the oven to 200°C with upper and lower heat.

Wash the bell peppers, cut them lengthwise in half, remove seeds and white inner walls, and place them with the concave side down in a greased baking dish. Wash the tomatoes and drain with olives. Rinse the herbs, shake dry, and pluck leaves. Peel the garlic, finely chop, and mix with the herbs, 3 tbsp olive oil, and Parmesan.

Drain the mozzarella, tear into small pieces, distribute with tomatoes and olives over the pepper halves, and pour the herb mixture on top. Season with salt and pepper, then bake in the preheated oven for about 20 minutes.

Arrange the peppers on a plate and drizzle with olive oil and Balsamic vinegar before serving.
