Ingredients

  • 4 bell peppers (red and yellow)
  • 1 stalk leeks
  • 1 tbsp butter
  • 2 Tomatoes
  • 250 g waxy potatoes
  • 2 Eggs
  • 50 g blue cheese
  • 75 g grated hard cheese (e.g., Emmental)
  • 1 tbsp flour
  • Salt
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)
  • 200 ml vegetable broth

Instructions

    Preheat the oven to 200°C with top and bottom heat. Wash the peppers, cut off a lid from each, and remove the white membranes and seeds.

    Wash, trim, and slice the leeks into thin rings; sauté in butter for about 5 minutes until softened, then remove from heat.

    Wash the tomatoes, discard stems and seeds, and dice them. Peel and grate the potatoes finely.

    In a bowl beat the eggs. Dice the blue cheese and add it with the grated hard cheese. Add flour, leeks, and tomatoes, and mix well.

    Season with salt, pepper, and nutmeg; fill the peppers with the mixture. Place in a baking dish, pour in the broth, and bake for 40–50 minutes.
