Ingredients

  • 6 yellow bell peppers
  • 250 ml olive oil
  • 4 tbsp white wine vinegar
  • 4 cloves garlic
  • 2 sprigs fresh rosemary
  • salt (pepper)
  • 5 small red peppercorns

Instructions

    Halve the bell peppers, remove seeds and wash. Blanch the halves in boiling water for 7 minutes, then drain and pat dry, removing skins. Peel the garlic cloves and slice them thinly. Layer the pepper halves in a shallow dish.

    Mix oil with vinegar, salt, and pepper and pour over the peppers. Distribute the garlic slices on top of the peppers. Cover the bowl and marinate in the refrigerator for at least 12 hours. Sprinkle rosemary needles before serving.
