Paprika Vegetables

Ingredients

  • 2 yellow bell peppers
  • 2 green bell peppers
  • 2 red bell peppers
  • 2 tomatoes
  • 2 garlic cloves
  • 1 onion
  • 4 tbsp olive oil
  • Salt
  • sugar
  • Pepper (freshly ground)

Instructions

    Wash the bell peppers, halve them, remove seeds and cut into strips. Wash the tomatoes, quarter them, remove seeds and stems, then dice.

    Peel and finely chop the garlic and onion, then gently sauté in hot olive oil. Add the pepper strips and diced tomatoes, cover and simmer for about 10 minutes over low heat with occasional stirring until tender. Season with salt, a touch of sugar, and pepper. Optionally add a splash of wine vinegar. Serve warm or cold.
