Paprika Pizza

- 225 g spelt whole‑grain flour (fine)
- 125 g low‑fat quark
- 1 egg yolk
- 4 Tbsp sunflower oil
- 0.5 tsp Sea Salt
- 0.5 packet Baking powder
- 1 tsp butter (for the pan)
- 1 large onion
- 1 green bell pepper
- 1 red bell pepper
- 1.5 tbsp cold‑pressed olive oil
- Herb salt
- 1 tsp Dried oregano
- 1 tsp dried basil
- 125 g mozzarella
- Basil

Knead flour with quark, egg yolk, oil, salt and baking powder into a smooth dough. Butter the pizza pan lightly. Place the dough in the pan and press it out by hand until the base is covered, forming a small edge. Peel the onion and cut into thin rings. Wash, trim, halve, seed and peel the bell peppers, then slice them into thin strips.

Heat oil. Sauté onion rings over low heat until translucent. Add pepper strips and cook 3–5 minutes. Season with herb salt, basil and oregano. Drain mozzarella and slice thinly. Arrange vegetables on dough and top with mozzarella slices. Bake in a preheated oven at 180 °C (fan) for about 20 minutes.
