Ingredients

  • 4 veal cutlets (e.g., from the upper loin), about 120 g each
  • 3 tbsp Flour
  • 2 tbsp heavy cream
  • 2 Eggs
  • 120 g breadcrumbs
  • Salt
  • freshly ground pepper
  • 60 g clarified butter

Instructions

    Step 1: Flatten each cutlet with a meat mallet or the bottom of a sauté pan.

    Step 2: Prepare three shallow dishes—one with flour, one with whisked eggs and cream, and one with breadcrumbs.

    Step 3: Season the cutlets with salt and pepper, then dredge them in flour.

    Step 4: Dip each cutlet into the egg mixture.

    Step 5: Coat gently with breadcrumbs, pressing lightly to adhere.
