Breaded Chicken Breast with Potatoes

- 4 chicken breast fillets
- 4 tbsp Dijon mustard
- 100 g yogurt (0.3% fat)
- 4 tbsp chopped chervil
- 100 g white bread crumbs (oven-dried)
- Salt
- 2 tbsp flour
- pepper (ground)
- 2 garlic cloves (thinly sliced)
- 80 g clarified butter
- 800 g potatoes

Peel and quarter the potatoes. Mix mustard, yogurt, and chervil. Coat chicken breast fillets in flour and brush with the mustard mixture. Press into seasoned white bread crumbs. Let the coating set for 1 hour in the refrigerator. Heat 60 g clarified butter in a pan and fry the cutlets 5-6 minutes per side over medium heat. Remove and keep warm.

Add another 20 g clarified butter to the pan and cook the potatoes covered for 20 minutes over medium heat, turning frequently until golden brown. Season with salt and pepper. Slice the chicken schnitzel into strips, arrange with the potatoes, and serve immediately. Blanched vegetables pair well.
