Paprika Mozzarella Salad

Ingredients
- 6 bell peppers (red and yellow)
- 4 tbsp olive oil
- Salt
- black pepper (freshly ground)
- 2 tbsp white balsamic vinegar
- 2 balls mozzarella (about 125 g each)
- 3 sprigs thyme
- 0.5 untreated lemon (juice and zest)
- 1 pinch sugar

Wash the bell peppers, cut them in half and remove seeds. Cut one half again into quarters. In a hot pan, sauté with 2 tbsp oil for about 5 minutes. Season with salt and pepper, deglaze with vinegar and 1–2 tbsp water. Remove from heat, let rest, then cool to lukewarm.

Drain the mozzarella and slice it. Arrange the pepper quarters on a plate and distribute the mozzarella over them. Pick off thyme leaves and sprinkle on top.

Whisk lemon juice with zest, remaining oil, salt, sugar, and pepper. Drizzle over the mozzarella and serve.
