Ingredients

  • 150 g old ciabatta bread
  • 400 g Tomatoes
  • 2 bell peppers (1 small red and 1 small green)
  • 1 bunch spring onions
  • 2 tbsp parsley (finely chopped)
  • 2 tbsp basil (finely chopped)
  • 2 Garlic cloves
  • 3 tbsp red wine vinegar
  • Salt
  • pepper (ground)
  • 5 tbsp olive oil
  • 1 tbsp capers

Instructions

    Cut the bread into cubes. Wash and dice the tomatoes. Wash, halve, seed, clean the bell peppers and cut them into fine cubes. Wash the spring onions, trim them and slice the white and light green parts into thin strips. Mix everything with the herbs.

    Peel and mince the garlic. Whisk the vinegar with salt and pepper, fold in the oil, and mix the capers into the salad. Chill for about 1 hour before serving.
