Ingredients
- 1 Aubergine
- 2 red bell peppers
- 2 green bell peppers
- 2 onions
- 200 g Galia melon (flesh)
- 4 tomatoes
- 2 stems oregano
- 2 stems thyme
- 1 sprig rosemary
- 1 Banana
- 4 tbsp olive oil
- Salt
- Pepper
Instructions

Wash and cube the aubergine. Quarter the bell peppers, wash, and cut into pieces. Peel and dice the onions.

Cut the melon into cubes. Wash and quarter the tomatoes. Rinse the herbs (reserve some for garnish) and finely chop them. Peel the banana and slice it thinly.

Heat olive oil in a large skillet. Quickly sauté the banana slices until golden. Remove from the pan.

Add aubergine, onions, and bell peppers to the skillet and fry for 3‑5 minutes. Stir in melon, tomatoes, and herbs; let everything simmer briefly. Season with salt and pepper, return the banana slices, garnish with fresh herbs, and serve hot.
