Ingredients

  • 400 g firm potatoes
  • Salt
  • 300 g pasta (e.g., penne, spirals)
  • 400 g Green Beans
  • 200 ml basil pesto (jar)
  • pepper (ground)

Instructions

    Peel the potatoes and cut them into bite‑size cubes. Boil the potatoes in salted water for 20–25 minutes until tender.

    In a second pot cook the pasta for 10–15 minutes to al dente.

    The beans need about 10–12 minutes to cook. Wash, trim, cut into ~5 cm pieces and blanch in boiling salted water for 3–4 minutes. Drain and let dry.

    Mix the cooked potatoes with the beans and pasta, then fold in the pesto. Season and grate Parmesan on top if desired.
