Breaded Cod Fillet

Ingredients
- 800 g waxy potatoes
- plant oil (for frying)
- Sea salt
- 600 g cod fillet
- 2 tbsp vinegar
- Salt
- ground pepper
- 2 Eggs
- 2 tbsp starch
- 4 tbsp flour
- paprika powder (sweet)

Wash the potatoes, brush thoroughly and cut into sticks. Rinse with cold water and pat dry.

Heat oil in a pot or deep fryer. When hot enough (about 160°C), add potato sticks portion-wise with a slotted spoon and fry 3-4 minutes until pale yellow.

Remove with slotted spoon, drain on paper towels, let cool. Fry all potatoes once.

Increase oil temperature slightly (about 180°C) and fry all potatoes again portion-wise for 2-3 minutes until golden brown and crisp. Drain on paper towels. Keep warm in an oven at 100°C if desired until all fries are ready.

Wash the cod fillet, pat dry, cut into ~2 cm wide strips, drizzle with vinegar and season with salt and pepper. Whisk eggs with starch well. Coat fish strips in flour, tap off excess, then dredge through egg mixture using a fork, let drain slightly and immediately fry in hot oil for about 5 minutes until golden brown. Drain on paper towels. For serving, season cod with salt and sprinkle paprika. Serve with fries.
