Paprika Meatball Casserole

Ingredients

  • 1 old-fashioned roll
  • 1 onion
  • 500 g mixed ground beef
  • 1 egg
  • 1 tbsp mustard
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp oil
  • 1 small red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 bunch spring onions
  • 1 tbsp oil
  • 1 packet potato mash powder (with milk, for 3 servings)
  • 50 g grated Gouda cheese
  • butter (for the pan)
  • breadcrumbs (for the pan)
  • 2 Eggs
  • 125 ml milk
  • 2 tsp thyme leaves (finely chopped)
  • Salt
  • Pepper (freshly ground)
  • thyme sprig

Instructions

    Soak breadcrumbs in water. Peel and dice the onion.

    Combine ground beef with onions, egg, mustard, salt, pepper and soaked breadcrumbs to form a smooth meat mixture.

    Shape small meatballs from the mixture using damp hands. Heat oil and briefly brown the meatballs around.

    Wash, clean, quarter, seed and remove white ribs of the bell peppers. Dice half finely, cut the rest into strips. Clean, wash and finely slice spring onions. Heat oil. Sauté diced peppers and spring onions for 5 minutes. Remove from pan. Quickly toss pepper strips in the hot pan.

    Prepare potato mash powder according to package instructions. Stir cheese and pepper-onion mixture into it.

    Grease a shallow ovenproof dish and line with breadcrumbs. Pour mashed potatoes into the dish and smooth the surface.

    Press meatballs onto the mash and arrange pepper strips decoratively between them.

    Whisk eggs and milk with thyme, salt and pepper; pour over the meatballs.

    Bake the meatball tower in a preheated oven at 180°C for about 45 minutes. Serve immediately garnished with thyme sprigs.
