Paprika Frittata Bites

Ingredients
- 1 red bell pepper, 1 yellow bell pepper, 1 green bell pepper (each with 2 small onions)
- 2 cloves garlic
- 2 tbsp pitted black olives
- 2 Tomatoes
- 4 tbsp olive oil
- Salt
- black pepper (freshly ground)
- 1 tsp chopped thyme leaves
- 5 eggs
- 2 tbsp chopped parsley
Instructions

Wash the peppers, halve them and remove the stems and membranes. Slice the halves into thin strips. Peel the onions and garlic. Cut the onions into fine rings, mince the garlic cloves. Slice the olives into rounds. Blanch the tomatoes, peel, quarter, deseed and dice small.

Heat olive oil in a non-stick pan and sauté the peppers, onions, and garlic while stirring. Add the tomatoes, salt, pepper, and thyme and cook briefly.

Whisk the eggs lightly and pour evenly over the vegetables. Gently stir until they begin to set. Then cover with a lid and cook the eggs on low heat.

Flip the omelette using a large lid, add the remaining oil to the pan and brown the second side golden yellow. Sprinkle with parsley before serving.
