Ingredients

  • 150 g Keniabohne
  • Salz
  • 250 g Kirschtomaten
  • 4 Knoblauchzehen
  • 12 rohe Garnelen (26/30), mit Kopf und Schale
  • 400 g penne
  • 20 g butter
  • 2 EL Olivenöl
  • 0.5 TL Fenchelsamen
  • 40 g geriebener Parmesan
  • Rucolablatt (zum Garnieren)

Instructions

    Wash, trim and blanch the beans in boiling salted water for about 5 minutes. Immediately shock them in ice water and drain. In the meantime, wash the cherry tomatoes. Peel and finely dice the garlic. Wash the shrimp and pat dry with paper towels.

    Cook the penne according to package instructions in boiling salted water. Heat butter and olive oil in a large pan. Sauté the garlic until translucent. Add beans, cherry tomatoes, and shrimp; cook while stirring occasionally for about 5 minutes. Season with salt, pepper, and fennel seeds.

    Drain the penne and fold into the pan mixture. Sprinkle with Parmesan and serve in deep bowls. Garnish with arugula.
