Ingredients

  • 700 g papaya (2 papayas)
  • 3 limes (juice)
  • 80 g cane sugar
  • lime zest (for garnish)

Instructions

    Halve the papayas lengthwise and use a spoon to remove the seeds. Peel the fruit halves.

    Add 300 ml water to a small pot.

    Add the cane sugar.

  4. 4.

    Turn the stove to high heat. Bring the sugar water to a boil.

  5. 5.

    Reduce to a syrup in about 5 minutes, not too thick.

    Cut the papaya halves into small pieces and place them in a mixing bowl.

    Add the sugar syrup and about 100 ml lime juice.

  8. 8.

    Blend everything with an immersion blender.

  9. 9.

    Taste the puree with a little more lime juice.

  10. 10.

    Transfer the puree to a metal bowl, cover, and put it in the freezer.

    Freeze for 4 hours.

    Stir the puree briefly with a spoon every hour.

    Shape the papaya sorbet into balls or nuggets as desired.

    Serve in dessert bowls garnished with lime zest.
