Panettone

Ingredients
- 42 g fresh yeast (1 cube)
- 150 ml lukewarm milk
- 1 tsp sugar
- 400 g flour
- 5 egg yolks
- 1 pinch salt
- 150 g soft butter
- 150 g dried fruit (raisins, dates, figs, candied lemon, candied orange)
- 50 g chopped almonds

- 1 egg yolk (for brushing)
- powdered sugar (for dusting)
Instructions

Crumble yeast into a small bowl, stir with sugar and a little milk until smooth, let rest 10 minutes. Add remaining milk, flour, egg yolks, salt and butter; knead into a smooth dough. Cover and leave to rise in a warm place for about 1 hour.

Line an 18-20 cm springform with a wide strip of aluminum foil so it has a higher rim. Thoroughly grease the form and foil, then dust with flour.

Dice dried fruit finely and fold in with almonds. Place dough in the form and cover; let rise again for 30 minutes.

Preheat oven to 200 °C, bake panettone on the lowest rack for about 45 minutes. Let cool 20 minutes, then carefully release from the form and allow to cool completely on a wire rack. Dust with powdered sugar.
