Berry and Herb Mousse Pancakes

Ingredients
- 2 Eggs
- 150 g flour
- 2 tsp Baking powder
- 250 ml milk
- 2 tbsp liquid honey
- 1 pinch salt
- butter (for cooking)
- 250 g strawberries
- 1 handful basil
- 1 tbsp yogurt
- 100 ml whipping cream
- 100 g quark
- basil (for garnish)

Separate the eggs and chill the whites. Whisk together flour, baking powder, milk, 1-2 tbsp honey, and yolks until smooth; let rest for about 15 minutes. Beat the whites with salt to stiff peaks and fold into the batter.

Heat a bit of butter in a non-stick pan, drop spoonfuls of batter and cook each side 1-2 minutes until golden brown. Flip and finish the other side 1-2 minutes. Keep pancakes warm at 80°C if needed while you make more.

Wash, deseed, and halve the strawberries. Wash basil, shake dry, pluck leaves from stems, finely chop. Mix with yogurt and puree very fine (ideally in a blender), adding 2-3 tbsp cream. Stir into quark and sweeten with remaining honey. Whip the rest of the cream to stiff peaks and fold in.

Plate pancakes topped with strawberries and basil mousse; garnish with fresh basil leaves.
