Papaya with Ice Filling
Papaya with ice filling and ginger syrup refreshes with a lush vitamin and mineral cocktail and the digestive enzyme papain.
Ingredients
- 15 g ginger (1 piece)
- 1 tbsp Maple Syrup
- 2 cloves of mace
- 50 g red currants
- 400 g ripe papaya (1 ripe papaya)
- 80 g lemon sorbet (ready-made)

Peel the ginger, dice it small, and bring to a boil with maple syrup, mace, and 5 tbsp water in a small pot. Cover and simmer over medium heat for 2 minutes, then let cool.

Wash the currants, pat dry, and use a fork to strip them from their stems.

Pour the cooled ginger syrup through a tea strainer into a cup.

Halve the papaya lengthwise and remove the seeds with a tablespoon.

Cut a slice off each half on the round side so they can stand upright. Brush the fruit flesh with some ginger syrup.

Let the lemon sorbet soften slightly, shape it into balls with an ice scoop, and place them in the papaya halves. Drizzle with remaining syrup, sprinkle with currants, and serve immediately.
