Almond Macarons

Ingredients

  • 2 egg whites
  • 1 tsp lemon juice
  • 100 g fine sugar
  • 120 g ground almonds
  • 1 tsp cocoa powder
  • 1 pinch cinnamon
  • 30 whole almonds (for garnish)

Instructions

    Beat the egg whites with the lemon juice until very stiff, gradually adding the sugar and continuing to beat until the mixture shines. Mix the ground almonds with sifted cocoa and cinnamon, then fold into the meringue. Fill a piping bag fitted with a round tip and pipe walnut‑size clusters onto parchment paper lined baking sheet.

    Press one almond into each macaron and bake in a preheated oven at 150 °C for about 20 minutes. Let the macarons cool slightly on the tray, then carefully lift them from the parchment and let them cool completely on a wire rack.
