Ingredients

  • 500 g thin green asparagus
  • Salt
  • Basil
  • 1 bunch spring onions
  • 4 tbsp olive oil
  • 1 Garlic clove
  • 2 tsp balsamic vinegar
  • ground pepper
  • 500 g garganelli (short twisted tube pasta)

Instructions

    Peel the lower third of the asparagus spears, trim the ends generously. Rinse the asparagus and cut into bite-sized pieces. Cook in salted water for 4-5 minutes, drain, shock with cold water and let dry.

    Rinse basil, shake off excess moisture, and pluck leaves from stems. Clean spring onions, rinse and finely chop.

    Heat olive oil. Sauté spring onions. Peel garlic and press it in, add asparagus and heat. Stir in basil. Season with salt and pepper.
