Papaya Salad

Ingredients
- 1 medium green papaya
- 10 Cherry tomatoes
- 80 g roasted salted peanuts
- 2 Garlic cloves
- 4 small red chilies
- 2 tbsp fish sauce
- 5 tbsp lime juice
- 1 tbsp palm sugar (or brown sugar)

Peel the papaya, cut it in half, scrape out and remove the unripe seeds. Roughly grate the flesh. Wash and chop the cherry tomatoes.

Peel and mince the garlic. Wash and finely chop the chilies with their seeds. Place the garlic and chilies in a mortar and crush finely. Add half of the peanuts and crush roughly. Mix in fish sauce, lime juice, and sugar. Gradually add the papaya grating and tomatoes, gently pressing to blend flavors.

Distribute the papaya salad onto four bowls. Roughly chop the remaining roasted peanuts and sprinkle over.
