Panzanella with Bell Pepper and Chorizo

Ingredients
- 250 g old ciabatta bread
- 6 tbsp Olive oil
- 2 Garlic cloves
- 250 g chorizo
- 4 bell peppers (red and yellow)
- 1 Red Onion
- 0.5 cucumber
- 1 handful parsley
- 3 tbsp white balsamic vinegar
- Salt
- a pinch sugar
- black pepper (freshly ground)

Cut the ciabatta into cubes and fry in 2-3 tbsp olive oil until golden brown and crispy. Drain on paper towels. Clean the pan and heat with 2 tbsp olive oil. Peel and thinly slice the garlic. Slice the chorizo and brown it with the garlic in the hot pan until golden. Drain again on paper towels.

Wash, halve, deseed, and cut the bell peppers into strips. Peel and finely dice the onion. Peel, halve lengthwise, remove seeds, and cube the cucumber. Rinse the parsley, dry, pluck, and finely chop.

Whisk together the remaining oil with balsamic vinegar, salt, sugar, and pepper to make a dressing. Toss all prepared ingredients gently and serve immediately on plates.
