- 6 green olives (pitted)
- 1 Garlic clove
- 4 small tomatoes
- 1 ripe Avocado
- 50 g sheep cheese (feta)
- 2 tsp seed oil
- 0.5 tsp dried thyme
- 2 slices whole grain bread

Finely chop the olives. Peel the garlic clove. Wash and halve the tomatoes. Cut the avocado in half, remove the pit, scoop out the flesh and mash with a fork.

Crush the feta finely and add it to the mashed avocado along with oil, thyme, and olives. Squeeze in the garlic, season with salt and pepper, mix well, taste. Spread the avocado mixture on the bread slices, cut diagonally, and top with tomato halves.
