Tea Sandwiches

- 8 slices sandwich bread
- 4 eggs (size L)
- 500 g cream cheese
- Salt
- pepper from grinder
- 1 tbsp Tomato Paste
- 200 g cucumber salad
- 4 stems basil

Trim the crusts off the sandwich toast. Hard boil the eggs, then cool them in cold water, peel and let them chill.

Whisk the cream cheese with salt and pepper. Halve the eggs and scoop out the yolks. Sift the yolks through a fine sieve and mix with 100 g of cream cheese. Dice the egg whites finely and fold into the mixture. Stir 200 g of cream cheese with tomato paste. Spread the egg‑cream and tomato‑cream on two sandwich slices, top with two more slices, then cut into strips.

Peel the cucumber, halve it lengthwise, remove the seeds and grate the flesh. Squeeze out excess moisture in kitchen paper. Rinse the basil, finely chop the leaves and mix them into the cucumber, seasoning with a little salt and pepper. Spread cream cheese on the remaining sandwich slices, lay cucumber on two of them, cover with the cream‑cheese side of another slice, then cut into strips. Arrange all sandwiches together.
