Ingredients
- 1 Shallot
- 1 garlic clove (finely chopped)
- 2 slices stale white bread
- 1 chicken breast fillet
- 1 bunch Basil
- 100 g cocktail tomatoes
- 2 tbsp white balsamic vinegar
- 2 tbsp olive oil
- Salt
- pepper (from grinder)
Instructions

Cut the bread into cubes and fry in 1 tbsp hot olive oil until golden brown. Drain on kitchen paper.

Wash the tomatoes, halve them and place with garlic in a bowl. Peel the shallot, halve it, slice into strips and add to the bowl.

Wash the chicken breast, cut into strips and sauté in 1 tbsp oil. Season with salt and pepper and add to the tomatoes. Mix in balsamic vinegar, season again with salt and pepper. Fold in bread cubes and basil leaves and serve immediately.
