Panfried Scallops

Ingredients

  • 8 scallops (with coral)
  • 2 tbsp olive oil
  • 1 clove garlic
  • 1 tsp lemon juice
  • 1 tbsp finely chopped parsley
  • Salt
  • Pepper (freshly ground)
  • 4 Tbsp breadcrumbs
  • 2 Tbsp grated Parmesan
  • 4 butter flakes (or a little olive oil)

Instructions

    Preheat the grill. Wash and pat dry the scallops. Peel and finely chop the garlic, then sauté briefly in a pan with olive oil. Add lemon juice, parsley, and the scallops. Increase heat and sear the scallops for a few seconds until they turn milky white.

    Transfer two scallops each into a small baking dish (or a scallop dish) and drizzle with the parsley-garlic sauce, seasoning with salt and pepper. Mix breadcrumbs with grated Parmesan, distribute evenly over the scallops, and drizzle each with a little olive oil. Place the dishes (or scallops) under the preheated grill and gratinate for about 1–2 minutes. Serve immediately.
