Pancakes with Yogurt and Kiwi

The delicious pancakes with yogurt and kiwi are perfect for a protein-rich and satisfying breakfast.
Ingredients
- 240 g spelt whole‑grain flour
- 360 ml milk (3.5% fat)
- 2 Eggs
- 3 tbsp maple syrup
- Cinnamon
- Salt
- 200 g red plums
- 150 g Yogurt (3.5% fat)
- 250 g low‑fat quark
- 4 kiwis
- 1 tsp Baking powder
- 2 tsp butter
Instructions

Whisk flour with milk, eggs, 1 tbsp maple syrup, a pinch of cinnamon and salt until smooth; let the batter rest for 30 minutes.

Meanwhile wash, halve, pit and roughly cube the plums; blend with the remaining maple syrup. Mix the puree with yogurt and quark. Peel, halve and cut kiwis into pieces.

Fold baking powder into the batter. In a pan heat 1 tsp butter over medium heat. Drop 4 spoonfuls of batter onto the pan and cook each side for 3–4 minutes until golden brown. Repeat with remaining batter. Arrange pancakes on plates with yogurt and kiwi slices.
