Ingredients
- 1 orange
- 2 Kiwis
- 0.5 Mango
- 100 g Strawberries
- 4 eggs
- 300 ml coconut drink
- 1 pinch salt
- 50 g almond flour
- 45 g spelt flour type 1050
- 1 tbsp butter
- 300 g Low-fat quark
- 1 tbsp milk (1.5% fat)
- 2 tbsp coconut flakes

Fillet the orange. Peel the kiwis and mango. Slice the mango flesh away from the pit. Dice both fruits. Wash, trim, and halve the strawberries. Mix all cut fruit in a bowl.

Whisk together eggs, coconut drink, and salt with a whisk. Combine almond flour and spelt flour in a bowl, then stir into the egg mixture until smooth.

Heat butter in a pan and cook eight thin pancakes one after another over medium heat, about 2‑3 minutes per side until golden brown.

Stir quark with 2 tbsp milk (30 ml). Fill pancakes with quark and fruit, sprinkle coconut flakes on top, and serve.
