Pancake Rolls with Caviar and Shrimp

Ingredients

  • 2 Eggs
  • 175 g flour
  • Salt
  • 1 tsp Baking powder
  • 350 ml milk (1.5% fat)
  • 4 tsp canola oil
  • Lemon
  • 1 apple
  • Chives
  • 300 g cooked shrimp (peeled and deveined)
  • 2 sprigs dill
  • 4 tsp caviar

Instructions

    Whisk eggs with flour, a pinch of salt, baking powder and milk into a smooth batter.

    Heat 1 tsp oil in a pan. Pour ¼ of the batter, tilt to spread thinly; cook until golden brown on both sides. Remove, drain on kitchen paper, let cool. Repeat for three more pancakes.

    Squeeze half a lemon. Wash apple, quarter it, core and slice into thin sticks; mix immediately with 1 tbsp lemon juice. Shake dry chives. Halve shrimp lengthwise. Wash dill, shake dry, pluck tips.

    Arrange pancakes side by side. In the upper quarter of each, lay apple sticks, shrimp, chive bundles and caviar to form a long, ~2 cm wide strand. Roll pancakes and slice into 3 cm thick rounds. Garnish with dill.
